The classes of animals are: mammals, birds, fish, reptiles, amphibians and invertebrates.  So you could use image of your favorite four legged pets, birds, fish, frog or crocodile, and even insects qualifies.   Just remember to use a die or embossing folder with your die cut machine on your projects.
